NUT MILK

FRESH & EASY

 

 

Serves 3

Ingredients:

4-5 Cups of filtered water

1 handful of nuts (cashew, brazil, or almond)

1 Tablespoon coconut oil

1/2 teaspoon vanilla extract

dash of salt

 

Directions:

Soak the brazil nuts in the water overnight.  In the morning blend the nuts, water, and remaining ingredients in a high speed blender until smooth.  Strain through a nut milk bag to remove excess pulp if desired.  Store in an airtight glass container in the fridge for up to 1 day. 

ROCKIN' BLUEBERRY

REFRESHING & REVITALIZING

 

Ingredients:

1 Cup of your favorite non dairy milk (almond, hemp, coconut, soy etc.)

1-2 Scoops of Rockin' wellness 

1 Tablespoon of coconut oil 

1 Handful of fresh or frozen blueberries 

 

Directions:

Place all ingredients into blender and blend until smooth.  Drink up and get ROCKIN'!

BBQ TEMPEH

ZESTY & SATISFYING 

 

Serves 2 

Ingredients:

8oz of tempeh, quartered (I used Lightlife tempeh with flax)

1 Cup of apple juice

1 Cup of Bragg's Liquid Aminos or Tamari or Soy Sauce

1 Cup of agave

2/3 Cup of filtered water

3 cloves of garlic, minced

13oz or 2 1/2 Cups of BBQ sauce (I used Organicville brand)

 

Directions:

Preheat the oven to 350 degrees.  In a large bowl mix the apple juice, Bragg's, agave, water, and garlic.  Place the tempeh into a baking dish in a single layer.  Pour the mixture over the tempeh.  Cover and bake for 45 minutes.  Drain the tempeh and let cool for a few minutes.  Place baked tempeh into a frying pan on the stove top at medium low heat.  Brush each side and all the edges with BBQ sauce.  Turn over periodically.  Remove from heat when lightly browned.  Serve with vegan cole slaw, quiona and corn, or use in a sandwich.  Store in the fridge for up to one week.

ROCKIN' GINGERBREAD MEN

FESTIVE & DELICIOUS

serves 4

Ingredients: 

1 Scoop of Rockin' Wellness

1/2 c vegan butter

2 1/2 c gluten-free all purpose flour mix

1/2 c sugar

1/2 c molasses

1 flax egg (1 Tb flaxseed meal + 2 Tbs warm water, allow to sit for 5 minutes to thicken)

1 tsp baking soda

1 tsp ground ginger

1/2 tsp ground cinnamon

1/2 tsp ground cloves

 
Instructions:

In a large bowl, beat margarine with an electric mixer on medium speed till softened. Next add about half of the flour, beat, then add Rockin' Wellness, sugar, molasses, egg, baking soda, ginger, cinnamon, and cloves.  Beat till thoroughly combined.  Add the remaining flour and beat.  Divide the dough in half and cover.  Chill in fridge for about 2 hours.  Preheat oven to 375 °.  Grease a cookie sheet or line with parchment paper, then set aside.  Lightly flour a surface and roll each dough half to 1/8 inch thickness.  Use cookie cutter to make shapes.  Place 1" apart on sheet and bake 10-15 minutes till edges are firm.  Cool on sheet for 1 minute then transfer cookies to wire rack and cool for a few minutes.  Decorate with icing or candy.  

ROCKIN' HOT CHOCOLATE

Serves 1

Ingredients:

2 scoops of Rockin' Wellness Inc.

2 Tbs Coconut Oil

3 Tbs Maple Syrup

A pinch of salt

2 c of Non-Dairy Milk (I used almond. You can make your own; check out our recipe for nut milk)

 
Instructions:

Begin by combining the Rockin' Wellness, coconut oil, maple syrup, and salt in a saucepan.  Heat mixture until smooth then add the milk.  Lower the heat and whisk occasionally until smooth.  Top with vegan whipped cream, crushed candy canes, or cinnamon.

SWEET POTATO FRIES
EASY & DELCIOUS
 
Serves 2
Ingredients:
1 - 2 Sweet Potatoes washed and chopped into matchstick pieces or wedges
1 - 1 1/2 C melted Coconut Oil
himalayan pink salt
your choice of seasonings i.e. garlic, curry, italian herbs, cayenne, chipotle, cajun, pepper, sesame

Directions:

Melt the coconut oil on the stovetop on low heat.  Once the oil has melted turn off the heat. Preheat the oven to 425 degrees. Cut the sweet potato into wedges or sticks or cubes and place in a large mixing bowl. Pour the melted coconut oil over the sweet potatoes and sprinkle in any desired seasonings.  Toss the sweet potatoes in the coconut oil until they are all coated.  Line a baking pan and place the sweet potatoes in a single layer on the baking sheet.  Bake for 50-60 minutes.  Serve with your favorite condiment.

THE ROCKIN' RICE KRISPIE

CRISPY & CHEWY

Don't be shy, get rockin' with this easy to make, easy to eat treat, that kids and adults of all ages will enjoy.

 

Serves 4

Ingredients:

4 Cups Brown Rice Crispies (I used Whole Food's 365 organic brand

3 1/2 Cups vegan marshellows (I used Sweet and Sara's)

1/4 Cup coconut oil

2 heaping scoops of Rockin' Wellness

1 Tablespoon vanilla extract

2 pinches salt

 

Directions:

Brush a 9 x 12 inch baking pan with coconut oil and set aside.  Next heat the coconout oil and marshmellows in a medium size pot on medium high heat.  After the marshmellows expand and begin to melt lower the heat.  Add the Rockin' Wellness, vanilla, and salt to the mix and stir frequently until well combined. Turn off the heat when the mixture is all melted and goey.  Transfer this creamy goodness to large mixing bowl and add the brown rice crispies.  Mix until all the crispies are coated then spread this business into the baking pan, cover, and chill  in fridge for at least one hour. 

Chocolate can be added on the top or throughout, colored rice cereals are playful. Try adding nut butter, dried fruit, or nuts.  

ROCKIN' COCOCHIP POPSICLE

CREAMY & REFRESHING

Cool down with this superfood enriched frozen dessert. This is a great healthy snack for kids (even if they don't clean their plate)

 

Serves 6

Ingredients:

1x 13.5 oz canned or fresh coconut milk

3/4 Cup unsweetened non-dairy milk (I used almond)

A pinch of himalayan pink salt

1 Tablespoon of vanilla extract OR 1 vanilla bean (use only the black flecks found inside the bean, use a knife to scrape them out)

4 scoops of Rockin' Wellness Inc.

1/3 Cup of vegan chocolate chips OR cacao nibs


Directions:
Blend all ingredients on low to medium speed.  Pour contents into your ice pop mold to fill line (I used Zoku Classic Molds).  Set in the freezer for at least 8 hours.  Run pop under hot water to remove from mold.  Munch, Smile, and Repeat
