ROCKIN' PUDDING Serves 4 Ingredients: 1 Scoop Rockin’ Wellness 1/3 Cup Sugar 1/4 Cup cocoa 1/4 Cup cornstarch 1/4 teaspoon salt 3 Cups almond milk 3 Tablespoons vegan butter 1 teaspoon vanilla Directions: In a medium size pot whisk together the Rockin’ Wellness, sugar, cocoa, cornstarch, and salt Slowly whisk in the almond milk Heat over medium heat, stirring constantly Continue to cook until pudding begins to thicken and bubble, then whisk in butter until fully incorporated Remove from heat and add vanilla Pour into jars or short glasses and cover with plastic wrap, make sure the plastic wrap touches the surface to avoid getting a “skin” across the top Refrigerate until cool Top with vegan whipped cream WHIPPED CREAMServes 4Ingredients: 1 Can full fat coconut milk (chilled in fridge overnight) 2 Tablespoons sugar Directions: Chill bowl and beaters Remove coconut milk from fridge. The liquid will be on the bottom and the cream on the top, therefore it will be easier if you flip the can over and open it from the bottom. Pour out all of the liquid and spoon the cream out into the chilled bowl Add the sugar Use a head beater to whip the coconut cream. Start on low and go to high, moving beater up and down to infuse the mixture with as much air as possible.
