1. What is lab-grown chocolate?
Lab-grown or cell-cultured cocoa begins with cells taken from the cacao plant. Those cells are multiplied in a controlled environment, typically using nutrients in a bioreactor. The resulting plant material can then be processed into cocoa ingredients.
2. Is cell-cultured cocoa actually being used to make chocolate?
Yes, at the development stage. In 2026, Celleste Bio announced that its cell-cultured cocoa butter had been used by strategic partner Mondelēz International to make nearly a dozen milk chocolate bars. Celleste says it is working toward market-ready quantities in 2027. Other companies are also developing cultured cocoa ingredients.
3. Is lab-grown cocoa the same as traditionally grown cacao?
That depends on what is being compared. Developers are working to create cocoa ingredients that perform like conventionally sourced cocoa. But cocoa butter, cocoa powder and minimally processed cacao are different ingredients with different nutritional profiles. Matching chocolate's melt, texture or flavor is not automatically the same question as matching every naturally occurring compound in cacao.
4. Is lab-grown chocolate safe?
Safety should be evaluated from evidence and regulatory review, not from whether an ingredient sounds natural or technological. Different cultured-cocoa products may use different processes, so consumers should look for clear labeling and product-specific information as these ingredients reach the market.
5. Why are companies developing cocoa in bioreactors?
Traditional cacao production has faced weather, disease, land-use and supply-chain pressures, along with major price volatility. Cultured cocoa is being developed as another potential source of cocoa ingredients that is less dependent on growing conditions in cacao-producing regions.
6. Does processing cacao matter?
Yes. One well-studied example is alkalization, also called Dutch processing. It changes cocoa's acidity, color and flavor, and research has found that increasing alkalization can substantially reduce measured flavanols. That is why the words on an ingredient list can matter.
