What’s Really in Your Halloween Chocolate? Cacao, Cocoa & the New Lab-Grown Alternative

Halloween puts chocolate everywhere: candy bowls, party treats, baking aisles and kitchen counters. This year there is another chocolate conversation worth knowing about. Alongside traditionally grown cacao and conventional cocoa, food-tech companies are developing cell-cultured cocoa ingredients grown from cacao plant cells in controlled environments.

So before the candy season takes over, here is a simple guide to the chocolate words consumers are seeing and the questions behind them.

Is cacao the same thing as cocoa?

The terms cacao and cocoa are often used interchangeably, so the name alone does not tell you exactly how an ingredient was processed. What matters is what happened after harvest: fermentation, drying, roasting, pressing, alkalization and other processing steps can change flavor, color and composition.

What does “cocoa processed with alkali” mean?

It means the cocoa has been alkalized, often called Dutch processed. Alkalization can create a darker color and smoother, less acidic flavor. Research has also shown that increasing alkalization can substantially reduce measured cocoa flavanols.

What are cacao flavanols?

Flavanols are naturally occurring plant compounds found in cacao. Their levels can vary widely depending on the cacao itself and how it is fermented, roasted and processed. That is one reason two chocolate-flavored foods can taste similar while being very different products.

What is cell-cultured or lab-grown cocoa?

Cell-cultured cocoa starts with cacao plant cells. Those cells are grown under controlled conditions, often in bioreactors, and the resulting plant material can be processed into cocoa ingredients. In 2026, cell-cultured cocoa butter was used to make prototype milk chocolate bars, and developers are working toward commercial-scale production.

Does lab-grown cocoa mean fake chocolate?

Not necessarily. Some developers describe their cultured ingredients as real cocoa because they originate from cacao plant cells. The more useful consumer questions are: Which cocoa ingredient is being used? How was it produced? How was it processed afterward? How will it be labeled? And what nutritional characteristics does the finished food actually have?

Is lab-grown cocoa healthier than regular cocoa?

There is not one blanket answer. Cocoa butter, cocoa powder, cacao powder and finished chocolate have different compositions. New cell-cultured ingredients should be evaluated product by product rather than assuming they are nutritionally superior or inferior simply because of how they were grown.

What should I look for when buying chocolate-flavored nutrition products?

Start with the ingredient list rather than the front of the package. Look at the source of the chocolate flavor, whether the cocoa is alkalized, what else is in the formula, and whether the finished product is appropriately tested for quality and safety.

The Rockin Wellness approach

Rockin Wellness Chocolate Cacao uses traditionally grown cacao. And because real ingredients still need real quality control, every batch of Rockin Wellness is laboratory tested for quality and safety, including testing for mold and bacteria.
