From Cacao Bean to Halloween Chocolate: What Happens Along the Way?

Before it becomes a fun-size bar in a Halloween bucket, chocolate begins somewhere completely different: inside the fruit of the Theobroma cacao tree.

How does cacao become chocolate?

Cacao seeds are removed from the pod, fermented and dried. From there, manufacturers can roast, grind, press, sweeten, blend and further process the cacao in many different ways.

Where does alkalization come in?

Some cocoa is treated with alkali, commonly called Dutch processing. The process can make cocoa darker, milder and easier to mix, but research also shows that it can reduce naturally occurring flavanols and polyphenols.

Why does Rockin’ Wellness skip that step?

Because we built Chocolate Cacao around the ingredient itself. We use real raw organic cacao rather than alkalized cocoa.

It is one of those tiny label details most people never think about until someone points it out. Then suddenly the chocolate aisle looks a little different.

So should I skip Halloween candy?

Nope. Enjoy Halloween. Steal the good candy before the kids find it. Just remember that “chocolate” can describe products that are very different from one another.

Always Real, Raw, Organic Cacao. Never Alkalized.
